Make crispy baked ground beef tacos with melty Colby cheese in under 30 minutes. A simple, family‑friendly recipe perfect for weeknight dinners or game day.

Why Baked Tacos Are a Game‑Changer

Most people make tacos on the stovetop — quick sauté, fill the shells, done. But baking your tacos takes the entire experience to another level. The shells crisp evenly, the cheese seals the flavors into the taco shell, and everything holds together beautifully. No more soggy bottoms or shells cracking in your hand.

Baked ground beef tacos with Colby cheese deliver that perfect balance of crunchy shell, savory beef, and creamy melted cheese. Colby is especially great here because it melts smoothly and adds a mellow richness that complements taco seasoning without overpowering it.

If you’re feeding a family, hosting game night, or just want a low‑effort dinner that tastes incredible, this recipe checks every box.

Why Colby Cheese Works So Well

Colby melts like a dream. It’s softer and creamier than cheddar, giving your tacos a smooth, velvety texture. It also browns beautifully in the oven, creating that irresistible cheesy crust on top.  The flavor also compliments the rest of the taco instead of overpowering the other flavors.

Ingredients You’ll Need

  • 1 lb (83% Lean) ground beef

  • 1 tsp Salt

  • 1 tsp Black Pepper

  • 1 tsp Garlic Powder

  • 12 crunchy taco shells (5.8 oz)

  • 1 lb shredded Colby cheese

  • 4-5 Roma Tomatoes

  • 1 Head Iceberg Lettuce

  • Optional toppings: sour cream, cilantro, jalapeños, salsa

How to Make Baked Ground Beef Tacos with Colby Cheese

1. Cook the Beef

·        Brown the ground beef in a skillet over medium heat with salt, pepper and garlic powder. Drain excess fat.

2. Fill and Bake

·        Spoon the seasoned beef into each shell. Add a layer of diced tomato, then a thin layer of lettuce. Top generously with shredded Colby cheese. Bake at 350°F for 10–12 minutes, or until the cheese is melted and the shells are golden.

3. Let Rest for 5 Minutes

·        Once out of the oven, let the cheese set up for 5 minutes before you try to separate the tacos!

4. Serve

·        Separate the tacos with a spatula and slide the spatula inside the shell to break the cheese seal.

·        Add any fresh ingredients.

5. Enjoy!
