Slow Cooker Creamy Reuben Soup (Corned Beef, Sauerkraut & Swiss)
Updated: Oct 7
This creamy Reuben soup combines corned beef, sauerkraut, Swiss cheese, and caraway seeds in a rich slow‑cooker broth. A hearty comfort classic ready in hours. It’s a fantastic way to use leftover corned beef!
A Comforting Soup Inspired by the Classic Reuben Sandwich
If you love a good Reuben sandwich — the savory corned beef, tangy sauerkraut, nutty Swiss cheese, and unmistakable caraway — this soup delivers all those flavors in a warm, creamy bowl. It’s rich, hearty, and perfect for chilly evenings, game days, or using up leftover corned beef after a holiday meal.
The slow cooker does most of the work, allowing the flavors to meld into a silky, savory broth. Heavy cream and grated Swiss cheese add luxurious body, while sauerkraut brings brightness that keeps the soup from feeling heavy. It’s comfort food with character.
Ingredients
• 1 lb cooked Corned Beef (We use leftovers when we make a corned beef, or have them cut a 1 lb chunk at the deli counter (not sandwich sliced)) and cut into chunks
• 1 Medium Onion – finely diced
• 2 Celery Ribs – finely diced
• 2 large cloves Garlic – minced or finely diced
• 3 Tbs. Butter
• 32 oz Beef Stock
• 1 cup Sauerkraut – drain and rinse
• 1 tsp Sea Salt
• 1 tsp Caraway Seeds
• 3/4 tsp Black Pepper
• 2 cups Heavy Cream
• 1-1/2 cups Swiss Cheese – Grated
Directions
• Heat a large sauté pan over medium-low heat. Melt butter in pan. Sauté onion and celery in the butter until the onion is soft and translucent. Add garlic and sauté for one more minute. Add to the slow cooker
• Add corned beef, beef stock, sauerkraut, sea salt, caraway seeds and black pepper to the slow cooker. Cover and cook on high for 2 hours
• Turn slow cooker to low. Add heavy cream and Swiss cheese. Cover and cook 1 additional hour
Serving Suggestions
This soup pairs beautifully with:
Rye bread or marble rye toast
A sprinkle of fresh parsley
Croutons or toasted caraway‑seed bread
A side salad with a bright vinaigrette
For a heartier meal, serve it alongside a classic Reuben sandwich or a simple grilled Swiss on rye.
